Good Deals

I really love good deals! Last week it was potatoes, this week my aunt Ginny pointed me toward the frozen food section of the natures market in my local Kroger.  I found all kinds of frozen dinners on sale.  More then half off most of them. I don't really buy many frozen convenience foods, but I really like the Amy's brand frozen food. Its usually organic or all natural ingredients. So when there is a sale, I stock up for the times when I can't make something from scratch.  Its nice to have back up in the freezer.  Do you have any deals you want to share? leave a comment!

These Amy's pocket sandwiches were only $1.49 each
A really big savings from their usual price.

Homemade Biscuit mix ( Part 2 )

I am going to show you a few good ways to use your new homemade biscuit mix!  You will be impressed! Whats that?... You think biscuit mix is just for biscuits? Maybe the occasional pancake you say. Well I have some news for you, biscuit mix does so much more! In fact I think I am going to start a series on all the things you can do with your homemade biscuit mix.
( please refer to the homemade biscuit mix post, for the recipe )
If you think of a good way to use your mix, leave it in the comment section!
For this post I just made simple blueberry muffins! They turned out great!

Wish you could smell them!

This was about five minutes after they came out of the oven.
My hungry crew ate them up.

Here is the proof !

Now for the recipe
2c. homemade biscuit mix ( you could also use store bought, but after seeing how easy it is to make it, why would you really?)
2/3c milk
1/2c sugar ( I used evaporated cane juice crystals )
2T oil ( I used olive this time, but butter, or coconut oil would be good too! )
1 egg
3/4c frozen or fresh blueberries

Heat oven to 400. Line muffin tins with liners  Stir all ingredients together except blueberries until just moistened, add blueberries last and fold in. Divide batter evenly into muffin cups and bake 13-18 min.

I use these muffin liners that I get from Amazon with free shipping, they are my first choice because they are unbleached. I get the best deal on them at Amazon.com
