Homemade Biscuit mix ( Part 2 )

I am going to show you a few good ways to use your new homemade biscuit mix!  You will be impressed! Whats that?... You think biscuit mix is just for biscuits? Maybe the occasional pancake you say. Well I have some news for you, biscuit mix does so much more! In fact I think I am going to start a series on all the things you can do with your homemade biscuit mix.

For this post I just made simple blueberry muffins! They turned out great!

Wish you could smell them! 

This was about five minutes after they came out of the oven. 
My hungry crew ate them up.

Now for the recipe
2c. homemade biscuit mix ( you could also use store bought, but after seeing how easy it is to make it, why would you really?) 
2/3c milk
1/2c sugar ( I used evaporated cane juice crystals ) 
2T oil ( I used olive this time, but butter, or coconut oil would be good too! ) 
1 egg
3/4c frozen or fresh blueberries

Heat oven to 400. Line muffin tins with liners  Stir all ingredients together except blueberries until just moistened, add blueberries last and fold in. Divide batter evenly into muffin cups and bake 13-18 min.
