Homemade Biscuit Mix

The convenience of a store bought biscuit mix is undeniable, the ingredients of a store bought biscuit mix however, should be denied!  Most of them contain partially hydrogenated oils, among other questionable ingredients. Another reason that I have for making my own, is that I like to use my freshly sprouted or freshly ground flours. It is much more cost effective to make your own mix, and you can use any flour you like. ( this might even work with a gluten free flour mix, or almond flour )

Homemade Biscuit Mix  ( recipe adapted from allrecipes )
8c Flour
1/3c Baking Powder
1/2t Salt
1c Palm Shortening ( you could use butter, but then you would have to store this mix in the fridge.)

Put all ingredients into a food processor ( I have to do mine in batches )
pulse until mixture is crumbly. Store in airtight container.

This mix makes the best pancakes... like these...

And These...
Don't you wish you had breakfast here with us this morning?
You could serve these pancakes with this Maple Syrup like I do.
I get this from Amazon.

To make these pancakes
mix 2 c of  biscuit mix, with 1c milk, and 2 eggs.

To make biscuits ( because after all this is a biscuit mix )
mix 1/3c milk for every cup of biscuit mix
* makes about 6 biscuits.

The Palm shortening comes from Tropical Traditions ( there is a link in my link section )
Palm shortening is a very healthy fat and good for you to consume ( as is coconut oil ) More on healthy fats later.
